Signature dishes demonstrate both creativity and skill. For instance, the crab roe and shrimp tofu blends silken tofu with fresh crab roe and green peas. As a result, the dish delivers a delicate, smooth, and flavorful experience. In addition, the stir-fried male sea crab offers a bolder taste. It features sand crabs cooked with Sichuan peppercorns, dried chilies, ginger, and garlic.

Another highlight is the steamed minced pork patty topped with snow crab. Made with hand-minced Iberian pork, water chestnuts, and mushrooms, the dish is finished tableside with hot broth. Therefore, it balances elegance and comfort perfectly.

Furthermore, Longyue prepares dishes that spare diners the trouble of shelling. For example, the crispy snow crab and tofu skin roll wraps crabmeat stir-fried with onions and truffle sauce in tofu skin, then deep-fried. Meanwhile, stir-fried snow crab with scallops combines crabmeat, eggs, bean sprouts, and dried scallops.

The crab feast concludes with a rich snow crab congee. Starting with slow-simmered lobster broth, it combines crabmeat, scallops, shrimp, mushrooms, and luffa. Additionally, crispy rice adds texture, creating a warm and savory bowl reminiscent of the ocean.
